Longfellow's Wayside Inn Indian Pudding Recipe
- 6 c. lowfat milk
- 1/2 c. cornmeal
- 1 1/2 teaspoon all-purpose flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon grnd ginger
- 1/4 teaspoon grnd cloves
- 2 tbsp. butter
- 1 c. molasses
- Ice cream: Vanilla or possibly coffee flavor
- About 4 hrs before serving, preheat oven to 300 degrees.
- In a heavy 3 qt saucepan over medium heat, heat 4 c. lowfat milk till very warm but not boiling.
- Meanwhile, in a small bowl, combine cornmeal, flour, cinnamon, ginger and cloves; slowly stir into warm lowfat milk; cook, stirring constantly, till mix is very thick, about 15 min.
- Remove from heat and with wire whisk or possibly spoon, stir in butter till melted; beat in molasses till well blended; then beat in remaining 2 c. lowfat milk.
- Pour mix into greased 2 qt casserole.
- Bake 3 hrs or possibly till knife inserted in center comes out clean.
- Serve hot pudding with ice cream.
- Makes 8 generous servings.
