Nicoles Black Bean Salsa
- 1 can (15 Oz. Can) Pinto Beans, Rinsed And Drained
- 1 can (15 Oz. Can) Black Beans, Rinsed, Drained.
- 1 can (14.5 Oz. Can) Diced Tomatoes
- 1 can (15 Oz. Can) White Corn, Drained
- 1 whole Small Red Onion, Diced
- 1 whole Small Green Pepper, Diced
- 1/2 cups Sugar
- 1/2 cups Cider Vinegar
- 1/2 cups Grapeseed Or Canola Oil
- In a small saucepan, bring the sugar, vinegar, and oil to a boil.
- Stir to dissolve sugar, then let cool.
- Mix the rest of the ingredients in your serving bowl, and pour the cooled liquid over it.
- Mix gently, and refrigerate for at least an hour before serving.
- Serve with tortilla chips or as a salsa on tacos.
