Fruit Cake
- 6 eggs
- 2 c. sugar
- 1 c. shortening
- 1/2 c. mayonnaise
- 2 c. grape juice
- 3 c. self-rising flour
- 7 tsp. cinnamon
- 1 tsp. allspice
- 1 tsp. nutmeg
- 1 tsp. vanilla
- 1 lb. pecans, chopped
- 1 box raisins, cooked
- 1/2 box white currants, cooked (optional)
- 1 c. crushed pineapple
- 1 pt. fig preserves
- 1 box dates, chopped
- 1 jar red cherries, chopped
- 1 jar green cherries, chopped
- Cook raisins and currants in saucepan with water to cover until they swell.
- Drain and set aside.
- Chop all fruit and set aside.
- Mix shortening and sugar in large bowl.
- Add eggs and mix thoroughly.
- Mix in grape juice and mayonnaise.
- Combine flour and spices; mix into the batter.
- Add vanilla.
- Flour fruit and mix in well.
- Bake at 350u0b0 for 1 1/2 hours.
