Blueberry Drop Cookies Recipe
- 1/2 c. shortening
- 1 c. sugar
- 1 egg, well beaten
- 1 teaspoon lemon extract
- 1/2 c. lowfat milk
- 2 1/2 c. flour
- 1/2 teaspoon salt
- 2 1/2 teaspoon baking pwdr
- 1 c. blueberries
- Cream shortening and sugar.
- Add in egg and beat well.
- Mix lowfat milk and lemon extract.
- Then add in alternately with dry ingredients (previously stirred together).
- Then lastly gently add in berries.
- Drop by tsp.
- onto greased cookie sheets.
- Bake at 325 degrees for 12 to 15 min.
- (Also can use almond flavoring instead of lemon extract and it's fabulous.)
