Turkey Neck Supreme
- 1 large pkg. turkey necks
- 1 bag large egg noodles
- 1 large finely chopped onion
- 1 large finely chopped bell pepper
- 1 large can tomatoes
- 1 medium bag baby carrots
- 1 can sweet peas
- 3/4 to 1 1/2 tsp. salt
- 1 1/2 tsp. pepper
- 2 tsp. crushed red pepper (optional)
- 1/4 c. flour
- Boil turkey necks with salt and pepper until almost tender. Add onions, bell pepper and carrots and continue to simmering until carrots are almost tender.
- Add noodles; simmer for 4 minutes.
- Add tomatoes, peas and crushed red pepper.
- Make a paste with flour and water.
- Stir in and cook for approximately 5 minutes.
- Serve with Mexican cornbread.
- Quick and easy.
- A complete meal for the working woman or overworked housewife!
