Plum Oatmeal Bread(Makes Two Loaves)
- 4 c. flour
- 1 1/3 c. packed brown sugar
- 2 Tbsp. baking powder
- 2 tsp. cinnamon
- 2 tsp. salt (optional)
- 2 c. quick cook oats
- 1 (30 oz.) can purple plums (packed in heavy syrup), drain (reserve juice), remove pits and chop
- 2 eggs, beaten
- 1/2 c. vegetable oil
- In mixing bowl, combine flour, sugar, baking powder, cinnamon, salt and oats.
- Stir chopped plums in flour mixture to coat well. Add enough water to the plum juice to make 1 1/2 cups liquid. Combine plum juice, eggs and oil.
- Add to flour mixture, stirring just until dry ingredients are moistened.
- Pour into two greased 8 1/4 x 2 1/2-inch loaf pans.
- Bake at 350u0b0 for 60 to 70 minutes. Cool for 10 minutes; remove from pans.
- Cool on wire rack.
- Wrap and store overnight for flavor.
