Chicken and Spinach Soup
- 1 onion, chopped
- 6 chicken breasts, chopped
- 1 tbsp. oil
- 1 bunch fresh spinach, chopped (leave out stalks)
- 4 md. potatoes, peeled and cubed
- 1 cube chicken stock
- 1 qt. warm water
- Salt and black pepper, to taste
- 1 cup fresh cream
- Chop onion and chicken, fry until brown in soup pot.
- Dissolve stock cube in warm water; add to pot.
- Peel and cube potatoes, add.
- Rinse spinach, add.
- Bring to a slow boil.
- Add salt and pepper.
- Add cream before serving.
