Veggie Scramble
- 12 green zucchini, diced
- 14 red bell pepper, diced
- 3 broccoli florets, chopped
- 14 cup red onion, chopped
- 1 large whole egg
- 3 egg whites
- 1 ounce parmesan cheese, grated
- nonstick cooking spray
- Whisk together whole egg and egg whites.
- Heat a nonstick skillet coated with nonstick cooking spray over medium heat.
- Add all vegetables and saute for about 3 to 5 minutes, until they begin to soften.
- Add in egg mixture and scramble together; continue to cook until eggs are cooked through, about 3 to 4 minutes.
- Remove from heat and sprinkle with cheese.
