Mexican Chili With Beer Rice Recipe
- 1 1/2 lbs. lean stewing beef, cut into cubes
- 1 lg. onion, sliced
- 1 clove garlic, chopped
- 4 tbsp. extra virgin olive oil
- 3 tbsp. wine vinegar
- 1/2 c. tomato sauce
- 1 c. red wine
- 1 bay leaf
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 ounce. green chili salsa
- Combine all ingredients in large saucepan.
- Bring mix to a boil, stirring occasionally.
- Reduce heat to simmer; cook for 3 hrs or possibly till meat falls apart.
- Serve with Beer Rice.
- Makes 4 servings.
