Crispy Cottage Pie
- 2 tablespoon light olive oil
- 1 onion, finely chopped or grated
- 2 cloves garlic, crushed
- 1 kg trim beef mince
- 1 tablespoon flour
- 1 carrot, peeled, grated Target 2 lb For $3.00 thru 02/06
- 1 zucchini, grated
- 2 cups water
- 1 cup frozen peas
- 3/4 cup salt reduced tomato paste
- 1 1/2 tablespoons VEGEMITE
- 2 teaspoons dried mixed herbs
- pepper, to taste
- Potato Topping
- 600g sweet potatoes, thinly sliced
- 1 tablespoon light olive oil
- 1/4 cup KRAFT* 33% Less Fat Grated Parmesan Cheese Blend Blend
- Heat oil in a large frying pan over medium heat.
- Add onion and garlic, cook until softened.
- Add mince, cook over high heat until well browned and cooked through.
- Stir in flour, carrot, zucchini, water, peas, tomato paste, Vegemite*, herbs and pepper.
- Simmer for 15 minutes.
- Place meat into a 20cm x 30cm shallow baking dish.
- Layer potatoes evenly over the meat, drizzle with oil, and sprinkle with parmesan.
- Bake in a moderate oven 180 degrees C for 30 minutes until golden.
- Serve with mixed green salad.
