Herb-Crusted Rack of Pork

  1. Preheat oven to 350F.
  2. Trim excess fat from meat; spread evenly with mustard.
  3. Mix bread crumbs, parsley, chives, rosemary, 3 Tbsp.
  4. of the oil, the salt and pepper; press evenly onto meat.
  5. Place on rack in roasting pan.
  6. Mix carrots and onion; toss with remaining 1 Tbsp.
  7. oil.
  8. Add to pan with meat.
  9. Bake 1 hour 30 min.
  10. to 2 hours or until meat thermometer registers 160F.
  11. Let stand 10 to 15 min.
  12. before slicing.
  13. Serve with carrots and onions.
