Herb-Crusted Rack of Pork
- 1 bone-in pork loin (5 lb.) King Sooper's 1 lb For $1.99 thru 02/09
- 1/3 cup GREY POUPON Savory Honey Mustard
- 1 cup plain dry bread crumbs
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh chives
- 1 Tbsp. chopped fresh rosemary
- 1/4 cup olive oil, divided
- 1 tsp. salt
- 1/2 tsp. coarsely ground black pepper
- 1 lb. baby carrots, cleaned Target 2 lb For $3.00 thru 02/06
- 1 medium Spanish onion, cut into 8 wedges
- Preheat oven to 350F.
- Trim excess fat from meat; spread evenly with mustard.
- Mix bread crumbs, parsley, chives, rosemary, 3 Tbsp.
