Broke Guy's Chili-Garlic Noodle Bowl
- 8 ounces soba noodles or 8 ounces spaghetti
- 2 tablespoons lemon juice
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 14 cup vegetable oil, divided
- 1 tablespoon chili-garlic sauce
- 1 lb medium shrimp, peeled deveined (optional)
- 2 cups cabbage, shredded (optional)
- 2 cups frozen peas, thawed (optional)
- 4 carrots, thinly sliced
- Cook the noodles according to the package directions.
- Toss them with the lime juice, soy sauce, sesame oil, chili-garlic sauce and 2 tablespoons of the vegetable oil.
- If you are using the optional shrimp, heat the remaining 2 tablespoons of vegetable oil in a large skillet over medium-high heat.
- Add the shrimp and cook, tossing frequently, until opaque throughout (2 to 3 minutes).
- Divide the noodles among 4 bowls and top with the shrimp.
- Add the cabbage, peas and carrots, dividing evenly.
