Mad Mary's Creamy Onion Soup Recipe
- 2 cubes butter
- 4 c. chicken broth
- 1/2 pound bacon
- 4 stalks celery, minced
- White pepper to taste
- 1 quart. half and half
- 1/2 c. flour, approximately
- 1 lg. yellow onion
- 1 lg. white onion
- 1 lg. purple onion
- 1 bunch green onions
- Heat butter in Dutch oven.
- Add in sliced yellow, white, and purpose onion and saute/fry till transparent.
- Halfway through saute/fry process add in minced celery and saute/fry till soft.
- Add in flour, stir till bubbly, 3-5 min.
- Add in chicken broth, stir till thickened.
- Add in half and half and simmer.
- Brown bacon, drain and crumble; add in to soup.
- Chop green onion, including tops.
- Add in to soup.
- Add in pepper to taste.
- Simmer 30-45 min.
- Serve with a good, warm French bread.
