Mad Mary's Creamy Onion Soup Recipe

  1. Heat butter in Dutch oven.
  2. Add in sliced yellow, white, and purpose onion and saute/fry till transparent.
  3. Halfway through saute/fry process add in minced celery and saute/fry till soft.
  4. Add in flour, stir till bubbly, 3-5 min.
  5. Add in chicken broth, stir till thickened.
  6. Add in half and half and simmer.
  7. Brown bacon, drain and crumble; add in to soup.
  8. Chop green onion, including tops.
  9. Add in to soup.
  10. Add in pepper to taste.
  11. Simmer 30-45 min.
  12. Serve with a good, warm French bread.
