Harvest Minestrone
- 4 slices bacon
- 2 stalks celery, chopped
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1/4 c. minced parsley
- 1 1/2 tsp. basil
- 1 tsp. oregano
- 2 sliced carrots
- 2 cubed potatoes
- 2 cubed turnips
- 2 medium zucchini, cubed
- 1/4 head cabbage, shredded
- 2 (1 lb.) cans tomatoes, chopped
- 12 rounded tsp. instant beef bouillon, dissolved in 3 qt. water
- 1 pkg. frozen peas
- 1 c. elbow macaroni
- 1 (16 oz.) can Great Northern beans
- 2 tsp. salt
- 1/2 tsp. pepper
- Fry bacon; drain and chop.
- In bacon fat, saute for 5 minutes the next 6 ingredients.
- Add the following 5 ingredients and saute for 10 minutes, stirring occasionally.
- Add tomatoes and beef bouillon mixture.
- Bring to boil and reduce heat.
- Cover and simmer 30 minutes, stirring occasionally.
- Stir in remaining ingredients with reserved bacon.
- Cover and simmer for 15 minutes.
- Serve sprinkled with grated Parmesan cheese.
- Makes 7 quarts.
