Spinach Bacon Salad
- 10 oz. fresh spinach
- 1 avocado
- 2 Tbsp. lemon juice
- 2 Tbsp. minced red onion
- 8 strips bacon
- 4 Tbsp. olive oil
- 1 Tbsp. wine vinegar
- 1/2 tsp. dry mustard
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 1 c. croutons
- Make dressing by combining olive oil; vinegar, mustard, salt and pepper.
- Wash, drain and dry spinach.
- Tear into bite size pieces and place in salad bowl.
- Halve avocado, remove pit, skin and slice thin.
- Place in small bowl and sprinkle with lemon juice to prevent discoloration.
- Add minced onion and 2 teaspoons of dressing and toss lightly.
- Pour dressing over spinach and toss lightly again.
- Add avocado and toss.
- Cook bacon in 1 teaspoon olive oil; when crisp and brown, pour over spinach mixture, fat and all.
- Break up bacon pieces and add to mixture and toss.
- Top with croutons and serve all at once.
