Palestine Sesame Tahini Sauce and Tahini Mix

  1. SESAME TAHINI SAUCE: Serve this sauce as an appetizer with pita bread.
  2. It also makes an excellent sauce for other foods.
  3. Place garlic, salt, tahini, water, lemon juice, and hot pepper in a blender and blend for a few moments.
  4. If a thinner sauce is desired, add more water, a little a time, while blending further until sauce becomes light in color and the same consistency as mayonnaise.
  5. Place on a serving platter, garnish with parsley, and sprinkle with olive oil.
  6. refrigerate for at least 1/2 hour before serving.
  7. Makes 2 cups TAHINI MIX (Salatat Taheena): Combine tomatoes, cucumber and parsley in a serving bowl; set aside.
  8. In another bowl, thoroughly mix the tahini with the lemon juice, and set aside.
  9. Mash garlic with salt; then stir into tahini-lemon juice mixture.
  10. Add to vegetables and toss; then garnish with dried mint and serve.
  11. 4-6 servings.
