Mincemeat Cheese Pie Recipe
- 4 (3 ounce.) pkg. cream cheese, softened
- 1/2 c. sugar
- 2 Large eggs, beaten
- 1 tbsp. grated lemon rinds
- 1 tbsp. lemon juice
- 1/2 teaspoon vanilla
- 1 1/2 c. prepared mincemeat
- 1 unbaked 9" pastry shell
- Beat cream cheese at medium speed till smooth.
- Add in Large eggs, sugar, lemon rinds, lemon juices and vanilla; beating well.
- Spread mincemeat in pastry shell.
- Spoon cream cheese mix proportionately over mincemeat.
- Bake at 375 degrees for 35 min or possibly till cream cheese layer is hard when lightly touched in center.
- Cook to room temperature, then refrigeratetill serving time.
