Carrot Relish
- 1 lb. carrots, diced (about 2 3/4 c.)
- 1/4 c. chopped green peppers
- 1 (2 oz.) jar chopped pimientos
- 1/4 c. vinegar
- 3 Tbsp. honey
- 2 Tbsp. finely chopped onions
- 1/4 c. sugar
- 1 Tbsp. all-purpose flour
- 1/4 tsp. dry mustard
- 1/4 tsp. celery salt
- 1/4 tsp. salt
- In
- a
- medium saucepan, cook the carrots, covered, in a small amount
- oftater for 10 minutes or until crisp-tender. Drain. Return
- carrots to pan.
- Add green peppers, pimientos, vinegar, honey and onions.
- Combine sugar, flour, dry mustard, celery
- salt and
- salt.
- Stir into vegetables.took and stir over medium heat until bubbly.took and stir 3 minutes more. Remove from heat and serve warm or chilled.takes 2 1/2 cups.
