Green Italian Minestrone
- 1 tablespoon olive oil
- 1 onion
- 1 potato
- 1 zucchini
- 1 (15 ounce) can hominy, drained
- 1 (15 ounce) can cannellini, drained
- 6 cups vegetable stock
- 10 ounces frozen cut green beans
- 1 cup egg noodles
- Cut potato & zucchini into small pieces, and chop onion.
- Preheat olive oil in pan over medium high heat, and saute with salt and pepper (to taste) for 5-6 minutes.
- Add hominy, cannelini, and stock and bring to a boil.
- Stir in noodles and frozen green beans and bring to a simmer.
- Cook 5 minutes longer, or until noodles are cooked.
