Shepherds Pie

  1. Brown the ground beef in a skillet and drain the grease.
  2. Add the tomato soup (do not dilute with water).
  3. Pour this mixture in the bottom of a pie dish or 9x9 baking dish.
  4. Add the green beans as the next layer.
  5. (My husband sometimes throws some canned corn in there, too!)
  6. Chop the potatoes into a small dice and boil until fork tender.
  7. Drain and mix into mashed potatoes, adding milk and butter according to your preference.
  8. Add the potatoes as the top layer of the pie.
  9. Cover with foil and bake at 375 F for 30 to 40 minutes, until heated through.
  10. If desired, remove the foil during the last few minutes of cooking and sprinkle some grated cheese on top of the pie.
  11. Enjoy!
