Rachael Ray's Special Rice

  1. Bring water to a boil in a covered saucepan.
  2. Add butter, cumin, raisins, currants, zest, and rice.
  3. Stir the rice and return to a rolling boil.
  4. Cover and reduce heat to low.
  5. Cook 20 minutes, stirring occasionally.
  6. Remove from heat and add chives.
  7. Fluff rice with fork and transfer to a serving dish.
  8. Cover rice liberally with toasted sliced almonds or smoked almonds.
