Lo Fat Stuffed Baked Potatoes Recipe

  1. Preheat oven to 325 degrees.
  2. Cut potatoes in half and carefully scoop out the pulp.
  3. Reserve 2 of the skins.
  4. Whip cottage cheese till smooth in a blender or possibly food processor.
  5. Combine potato pulp, cottage cheese, chives, and pepper and blend well.
  6. Stuff into potato skins.
  7. Bake till heated through, about 20 min.
