Cabbage Rolls(Golabki)

  1. Wilt cabbage leaves by scalding in boiling water to which 2 tablespoons vinegar and 1 teaspoon salt have been added.
  2. Drain. Cool in cold water and pat dry.
  3. Cut out heavy ribs.
  4. Saute onion in butter until transparent.
  5. Combine meat, egg, rice and seasoning.
  6. Spread each leaf with about 2 tablespoons of the mixture.
  7. Fold the two opposite sides and roll, starting with one of the open ends.
  8. Place in pan.
  9. Add butter and 1 cup hot water. Simmer slowly for 2 hours.
  10. Cabbage rolls may be served with mushroom sauce, tomato sauce or sour cream.
  11. They are more delicious if served, reheated, the next day.
