Shrimp Creole
- 1 c. sliced onions
- 1/4 c. chopped green pepper
- 1/2 c. diced celery
- 4 c. canned cut up tomatoes
- 3 Tbsp. salad oil
- 1 Tbsp. flour
- 1 tsp. sugar
- 1/4 tsp. paprika
- 2 tsp. Worcestershire sauce
- 2 c. shrimp
- 1 c. water
- 1 clove garlic, minced
- 2 c. cooked peas
- 1 tsp. salt
- 1 tsp. chile powder
- 2 tsp. dry parsley
- Cook onions, pepper, celery and garlic in oil until tender, about 10 minutes.
- Add flour, salt, sugar, paprika, parsley, Worcestershire sauce and chili powder which have been mixed with 1/4 cup water.
- Add remaining water and simmer 15 minutes.
- Add tomatoes, peas and shrimp.
- Heat thoroughly.
- Serve over hot cooked rice.
- Serves 6.
