Baked Fish With Stuffed Dates

  1. Heat oven to 325u0b0.
  2. Cover bottom of a large baking pan with onion slices; set aside.
  3. In a large mixing bowl, combine rice, almonds, sugar, pepper, 1 teaspoon ginger root and dates.
  4. Stir well to blend.
  5. Fill stomach of cleaned fish with rice mixture. Close opening and secure with toothpicks.
  6. Place stuffed fish on top of onion slices in pan.
  7. Add water.
  8. Rub top of fish with remaining ginger.
  9. Cover pan with foil, sealing tightly around edges.
  10. Bake 45 minutes for bluefish or 30 minutes for porgies. Makes 6 to 8 servings.
