Cathead Honeysuckle Blackberry Collins
- 2 ounces Cathead honeysuckle vodka
- 4 ounces fresh lemonade
- 2 ounces club soda
- 2 tablespoons blackberry-ginger syrup
- lemon wheel or slice, to garnish
- 2 pints ripe blackberries
- 1 tablespoon fresh ginger, sliced
- juice of half a lemon
- 2 tablespoons honey
- Heat honey, ginger and lemon juice and in a non-reactive pot over medium heat until the mixture forms large bubbles.
- Add blackberries to mixture and simmer until mixture is reduced by half.
- Remove from heat and allow to cool completely.
- Strain through fine mesh strainer.
- Syrup will keep in a bottle or jar in the refrigerator for three weeks.
