Crispy Peach Napoleons

  1. Heat oven to 400 degrees Fahrenheit.
  2. Cover two baking sheets with nonstick foil.
  3. Place honey in a small glass dish and microwave on HIGH 20 seconds.
  4. Stack egg-roll wrappers and cut on the diagonal into 24 triangles.
  5. Place triangles in a single layer on prepared baking sheets.
  6. Brush tops with the heated honey.
  7. Bake at 400 for 6-7 minutes until crisp.
  8. Remove from oven; cool completely.
  9. In small bowl, beat cream cheese and confectioners' sugar.
  10. To serve, place 1 triangle on serving dish.
  11. Spread with 1 scant tablespoon of the cream cheese mixture and top with a few peach pieces.
  12. Top with a second triangle, cream cheese mixture and peach pieces.
  13. Top with a third triangle and dust with confectioners' sugar.
  14. Repeat with remaining ingredients for a total of 8 napoleons.
  15. Garnish with mint, if desired.
