Glazed Carrots With Dill
- 1 lb carrot, cut into 1-inch pieces
- 12 ounces carbonated lemon-lime beverage (1 can)
- 1 tablespoon butter, unsalted
- 1 teaspoon dill weed, dried
- salt, to taste
- pepper, to taste
- Combine carrots and soda in a small saucepan over medium-high heat; bring to a boil.
- Reduce heat to medium, cover and simmer 10 minutes.
- Uncover and simmer an additional 10 minutes, or until liquid is almost evaporated and carrots are tender when pierced with a fork.
- Add butter and seasonings; toss until melted.
- Transfer to a bowl and coarsely mash with a fork or potato masher.
- Season with salt & pepper to taste.
