Saury Stewed with Umeboshi (pickled plums)
- 4 Pacific saury (sanma)
- 5 Umeboshi
- 1 Water
- 3 tbsp Soy sauce
- 2 tbsp Sake
- 1 1/2 tbsp Sugar
- 2 tbsp Mirin
- Remove the head and the guts of the sauries and clean them well with water.
- Put the sauries in the pressure cooker and add enough water until they are just covered.
- Add the seasonings and the umeboshis and cover with the lid.
- Cook for 15 minutes, then turn off the heat and let it steam for about 5 more minutes, and you are done.
