Saury Stewed with Umeboshi (pickled plums)

  1. Remove the head and the guts of the sauries and clean them well with water.
  2. Put the sauries in the pressure cooker and add enough water until they are just covered.
  3. Add the seasonings and the umeboshis and cover with the lid.
  4. Cook for 15 minutes, then turn off the heat and let it steam for about 5 more minutes, and you are done.
