Applesauce Raisin Cake
- 1 c. packed light brown sugar
- 1 1/2 sticks softened butter or margarine
- 2 tsp. baking soda
- 2 tsp. ground cinnamon
- 1/2 tsp. salt
- 3 c. flour
- 1 1/2 c. applesauce
- 2 large eggs
- 1 c. dark raisins
- 1 c. chopped pecans
- 1 c. powdered sugar
- 16 pecan halves (for garnish)
- Preheat oven to 350u0b0.
- Grease a 10-inch loaf pan.
- In large bowl with mixer at medium speed, beat brown sugar, butter, baking soda, cinnamon and salt until light and fluffy.
- Reduce speed to low.
- Add flour, applesauce and eggs; beat until blended.
- With a spoon, stir in raisins and chopped nuts.
- Spoon batter into pan. Bake for 50 to 60 minutes.
- Cool cake in pan for 10 minutes. Remove cake from pan; cool completely.
- When cake is cool, prepare glaze.
