Low Fat Vegetarian Chili

  1. In a large pot, heat oil and saute onions and garlic until soft.
  2. Add all ingredients except beer, peanuts and cheddar cheese.
  3. Cover and simmer 1 1/2 hours.
  4. Add beer and simmer uncovered for 30 minutes.
  5. Add handful of peanuts and sprinkle cheese on each serving.
