6WBM Hot Chicken Fingers
- 1 lb chicken breast, boneless, skinless. (cut into 1 1/2 inch strips)
- 13 cup Tabasco sauce
- 12 cup water
- 2 cups oatmeal (uncooked)
- 12-1 teaspoon cayenne pepper
- 12-1 teaspoon no salt added chili powder
- 2 egg whites, beaten until slightly-frothy
- Mix Tabasco, and water in a large bowl and marinate chicken in the fridge for an hour (or more; the longer it marinates, the more flavorful it gets!
- ).
- Grind uncooked oatmeal in blender.
- Mix oatmeal with cayenne pepper and chili powder in a shallow bowl.
- Roll chicken in oatmeal mixture and lay on a foil-lined baking dish.
- Brush with egg white on face up side.
- Bake for about 25-30 minutes at 350 degrees.
- Turn over chicken and brush other side with egg white.
- Bake for another 15-30 minutes until golden brown.
