Grilled Fish with Skordalia

  1. Boil or microwave potatoes until tender, drain.
  2. Mash potato then stir in the Philly* until smooth.
  3. Process bread until it forms breadcrumbs, add lemon juice, oil, garlic and seasonings.
  4. Stir through potato mixture to make the Skordalia.
  5. Brush fish with oil and season.
  6. Cook on a pre-heated grill for 3-4 minutes each side, depending upon thickness.
  7. Serve with the Skordalia and salad.
