Grilled Fish with Skordalia
- 600g Desiree potatoes, peeled, chopped
- 125g PHILADELPHIA Spreadable Cream Cheese
- 4 slices white bread, crusts removed
- 1/4 cup lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1/4 teaspoons olive oil
- 2 garlic cloves, crushed
- salt & pepper, to taste
- 4 firm white fish fillets/cutlets King Sooper's 1 lb For $7.99 thru 02/09
- 2 teaspoons olive oil, extra
- salad, to serve
- Boil or microwave potatoes until tender, drain.
- Mash potato then stir in the Philly* until smooth.
- Process bread until it forms breadcrumbs, add lemon juice, oil, garlic and seasonings.
- Stir through potato mixture to make the Skordalia.
- Brush fish with oil and season.
- Cook on a pre-heated grill for 3-4 minutes each side, depending upon thickness.
- Serve with the Skordalia and salad.
