Black Bean Salad
- 48 ounces canned black beans, drained
- 12 ounces canned sweet corn, drained
- 10 cherry tomatoes, sliced in half
- 12 cup red onion, diced
- 14 cup green onion, sliced
- 3 garlic cloves, minced
- 2 jalapenos, diced (optional)
- 2 chipotle chiles in adobo, chopped
- 1 teaspoon ground black pepper
- 1 teaspoon sea salt
- 1 tablespoon ground cumin
- 1 tablespoon fresh cilantro
- 1 teaspoon oregano
- 3 tablespoons olive oil
- 1 lime, juiced
- Combine all ingredients in a large bowl and allow to marinate for about and hour.
- Portion into 5 equal servings.
