Cabbage And Potato Chowder
- 8 slices bacon, cut into 1-inch pieces
- 1 large onion, thinly sliced
- 1 medium red pepper, chopped
- 2 cans cream of potato soup
- 3 c. chicken broth
- 2 c. light cream
- 3 c. shredded cabbage
- 2 c. cauliflorets
- 1 (10 oz.) pkg. broccoli florets
- 1/2 tsp. garlic salt
- 1/8 tsp. pepper
- 1 c. shredded Jarlsberg cheese
- In a large, deep saucepan, cook bacon until crisp.
- Remove. Set aside.
- Leave 2 tablespoons drippings.
- Add onion and red pepper; saute for 3 minutes, stirring often.
- Blend in soup, broth and cream.
- Add cabbage, cauliflower, broccoli, garlic, salt and pepper.
- Simmer 10 minutes, just until vegetables are tender. Gradually blend in cheese.
- Garnish with bacon.
