Lima Bean Soup

  1. Clean
  2. and
  3. wash
  4. beans.
  5. Add
  6. to
  7. the gallon of water. Cover and
  8. bring
  9. to a boil.
  10. Cook for 1 hour over a low fire. After the beans have cooked for 1 hour, add the ham, or bacon, onions, celery,
  11. green peppers, tomatoes and continue to cook for an additional 45 minutes under a low fire.
  12. With 2 tablespoons of flour,
  13. mix a smooth mixture of flour and water and add
  14. to
  15. the soup,
  16. stirring
  17. to make a smooth textured soup. Serve as an appetizer, or as a main course meal.
  18. Serves 15 to 20 people.
