Lima Bean Soup
- 1 lb. lima beans
- 1/2 lb. ham, chopped fine or 1/4 lb. bacon, fried crisp and crumbled fine
- 1/2 c. celery, chopped fine
- 1 small green pepper, chopped fine
- 1 medium onion, chopped fine
- 1 (16 oz.) can crushed tomatoes
- 4 Tbsp. salt
- 2 Tbsp. black or white pepper
- Clean
- and
- wash
- beans.
- Add
- to
- the gallon of water. Cover and
- bring
- to a boil.
- Cook for 1 hour over a low fire. After the beans have cooked for 1 hour, add the ham, or bacon, onions, celery,
- green peppers, tomatoes and continue to cook for an additional 45 minutes under a low fire.
- With 2 tablespoons of flour,
- mix a smooth mixture of flour and water and add
- to
- the soup,
- stirring
- to make a smooth textured soup. Serve as an appetizer, or as a main course meal.
- Serves 15 to 20 people.
