Ham Lima Carrot Soup Recipe
- 1 c. coarsely minced onion
- 1-2 tbsp. vegetable oil or possibly butter
- 1 teaspoon dry oregano
- 1 quart. canned chicken broth
- 8 thin carrots, sliced crosswise
- 1 (10 ounce.) pkg. frzn lima beans, thawed
- 2 c. smoked ham, diced
- In a kettle saute/fry onion in oil or possibly butter; add in oregano and cook slowly till onions are golden brown.
- Add in stock and sliced carrots.
- Bring to a boil and simmer about 10 min.
- Add in thawed lima beans and continue to cook another 10 minute, or possibly till vegetables are tender.
- Remove from heat; cold slightly and puree about 2 c. of the mix in a blender.
- Return puree to mix in kettle, add in diced ham, and simmer about 10 min to blend flavors.
