Baked Stuffed Apricots Recipe

  1. Heat oven to 375 degrees.
  2. Cut apricots in half lengthwise and remove pits.
  3. Place apricot halves in baking dish, cut-side up.
  4. Place cookies on a clean surface.
  5. Using a rolling pin, crush the cookies into fine crumbs, and transfer to a small bowl.
  6. Add in butter, brandy, and egg yolk, and, using a wooden spoon, mix to combine.
  7. Place about 1 Tbsp.
  8. of the cookie mix into the cavity of each apricot half.
  9. Bake till the apricots are tender, 25 to 35 min, depending on the ripeness and size of apricots.
  10. Serve with a dollop of whipped cream on the side.
  11. This recipe yields 4 servings.
