Avocado Toast
- 1 Haas avocado
- Juice of 1/2 lime
- Kosher salt
- 1 slice pain au levain, toasted
- 4 to 6 slices pickled Fresno chiles or pickled jalapenos
- 1/4 cup loosely packed red radish sprouts
- 4 cilantro leaves
- Pinch Maldon salt
- Olive oil, for drizzling
- Use a fork to smash the avocado in a small bowl, leaving it slightly chunky; stir in the lime juice and season with kosher salt.
- Spread the avocado smash on the toasted pain au levain, and top with the pickled chile slices, red radish sprouts and cilantro.
- Sprinkle a little Maldon salt on top and finish with a few drops of olive oil; serve.
