Avocado Toast

  1. Use a fork to smash the avocado in a small bowl, leaving it slightly chunky; stir in the lime juice and season with kosher salt.
  2. Spread the avocado smash on the toasted pain au levain, and top with the pickled chile slices, red radish sprouts and cilantro.
  3. Sprinkle a little Maldon salt on top and finish with a few drops of olive oil; serve.
