Christmas Cookies
- 1 c. soft shortening
- 1 c. white sugar
- 1 c. brown sugar
- 2 eggs (unbeaten)
- 1 tsp. vanilla extract
- 2 c. flour
- 1 tsp. soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2 c. oatmeal
- 2 c. cornflakes, crushed
- 1 c. chopped pecans
- 1 c. raisins
- 1 c. coconut
- 1 c. red candied cherries
- 1 c. green candied cherries
- Cream shortening and sugars.
- Add eggs and vanilla extract. Sift in dry ingredients.
- Add oatmeal, cornflakes, pecans, raisins, coconut and candied cherries.
- Work with hands until well mixed. Form into small balls and press slightly on cookie sheet.
- Bake at 375u0b0 for 8 to 10 minutes.
- Makes 100 medium-sized cookies.
