Vegan Avocado Salad
- 4 leaves Lettuce
- 1 Cucumber
- 1 Carrot (small)
- 1 Avocado (large)
- 1 Yuzu
- 1 Extra virgin olive oil
- 2 pinch Sea salt
- Slice the cucumber and carrot, and tear the lettuce into bite-sized pieces.
- Cut the avocado in half, and scrape out the flesh.
- (It will get mushed when you mix everything together, so you don't have to be too neat about it).
- Mix the juice from the yuzu with the sea salt and olive oil.
- Coat the vegetables, and it's done.
