Mix 'n Match Mini Cheesecakes

  1. Mix crumbs, 3 Tbsp.
  2. sugar and butter; press scant 1/3 cup crumb mixture onto bottom of each of 4 mini (4-1/2-inch) springform pans.
  3. Bake at 300F for 7 minutes.
  4. Mix cream cheese, 3/4 cup sugar and vanilla with electric mixer on medium speed until well blended.
  5. Add eggs, 1 at a time, mixing on low speed after each addition just until blended.
  6. Pour 1/4 of the batter (about 1 cup) into each of 4 bowls.
  7. Add 1 of the Stir-In Ideas to each bowl of batter, mixing Ideas as desired.
  8. Pour over crusts.
  9. Place pans on cookie sheet.
  10. Bake at 300F for 40 to 45 minutes or until centers are almost set.
  11. Run knife or metal spatula around rims of pans to loosen cakes; cool before removing rims of pans.
  12. Refrigerate 4 hours or overnight.
  13. STIR-IN IDEAS per 1/4 portion of batter: Apple-Pie: Stir in 1/8 tsp.
  14. ground cinnamon; pour over crust.
  15. Bake as directed.
  16. Top cheesecake with combined 1/2 cup warmed apple pie filling and 1/2 tsp.
  17. brown sugar.
  18. S'Mores: Stir in 3 Tbsp.
  19. BAKER'S Milk Chocolate Chunks; pour over crust.
  20. Top with 1/4 cup JET-PUFFED Miniature Marshmallows and 1 Tbsp.
  21. broken HONEY MAID Graham Crackers.
  22. Citrus: Stir in 1 tsp.
  23. lemon, orange or lime juice; 1 tsp.
  24. flour and 1/4 tsp.
  25. grated lemon, orange or lime peel.
  26. Chocolate-Chunk: Stir in 1/4 cup BAKER'S Milk Chocolate Chunks.
  27. New-York: Stir in 1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream and 1 Tbsp.
  28. flour.
  29. Cookies-and-Cream: Stir in 1/4 cup chopped cookies, such as OREO Chocolate Sandwich Cookies, NUTTER BUTTER Peanut Butter Sandwich Cookies or CHIPS AHOY!
  30. Chocolate Chip Cookies.
  31. Chocolate-Royale: Stir in 2 squares BAKER'S Semi-Sweet Baking Chocolate, melted.
  32. Peanut-Butter: Stir in 2 Tbsp.
  33. peanut butter and 1 Tbsp.
  34. milk.
  35. Mocha: Mix 1 tsp.
  36. MAXWELL HOUSE Instant Coffee granules with 2 tsp.
  37. hot water.
  38. Stir into batter along with 2 squares BAKER'S Semi-Sweet Baking Chocolate, melted.
  39. Cherry-Topped: Bake mini cheesecake as directed without Stir-Ins.
  40. Top with 1/3 cup cherry pie filling just before serving.
