Black-and-Whites

  1. Preheat oven to 300 degrees F.
  2. In a medium bowl, combine flour, cocoa powder, baking soda, and salt.
  3. Mix well with a wire whisk; set aside.
  4. Blend sugars in a large bowl using an electric mixer set at medium speed.
  5. Add butter and mix to form a grainy paste, scraping down the sides of the bowl.
  6. Add eggs and vanilla; beat at medium speed until combined.
  7. Do Not Overmix!
  8. Add the flour mixture and chocolates, and blend at a low speed until just combined.
  9. Do Not Overmix!
  10. Drop by rounded Tablespoons onto ungreased cookie sheets, 2-inches apart.
  11. Bake 23 to 25 minutes.
  12. Transfer cookies immediately to a cool flat surface upon removal from oven.
