Chicken, Okra And Smoked Sausage Gumbo
- 1 qt. sliced okra
- 1 stick butter
- 1 bell pepper
- 1/2 c. chopped green onions
- 1 tsp. minced garlic
- 1/2 tsp. thyme
- 1 lb. smoked sausage
- salt, red pepper and black pepper to taste
- 2 qt. water
- 2 large onions, chopped
- 1 (28 oz.) can Ro-Tel tomatoes
- 1 Tbsp. cooking oil
- 1/2 tsp. onion powder
- 1 lb. chicken
- shrimp
- Melt butter.
- Season chicken with salt and red and black pepper.
- Brown in butter and remove.
- Brown sausage and remove. Smother sliced okra in oil until brown.
- Add onions and bell pepper.
- Simmer until wilted.
- Add garlic and tomatoes.
- Simmer 6 minutes.
- Add water and seasoning and bring to boil, then simmer 5 minutes.
- Add sliced sausage and chicken.
- Simmer 45 minutes.
- Add green onions.
- Simmer 10 minutes.
- Serve over rice.
