Boston Baked Beans
- 2 c. dried navy beans
- 1/2 tsp. baking soda
- 1 medium yellow onion, peeled and sliced
- salt pork seasoning
- 3 Tbsp. dark molasses
- 1 Tbsp. cider vinegar
- 1 tsp. dry mustard
- 1/4 c. brown sugar
- 1 tsp. salt
- 1/4 tsp. black pepper
- Soak the beans overnight in ample water.
- Drain the beans and cook in ample water with the baking soda.
- Bring to a boil and simmer for 20 minutes.
- Drain.
- Place beans in a 2-quart baking pot with a lid.
- Add salt pork and onion.
- Mix remaining ingredients with a cup of hot water and pour over the beans.
- Add enough additional hot water to cover the beans.
- Place the lidded baking pot in a 300u0b0 oven for about 4 hours, longer if the beans are not tender.
- Stir only once or twice during the cooking process and add more water to keep the beans moist.
- Do not drown them.
