Quick & Easy Potato-Rosemary Galette
- 4 medium baking potatoes
- 1 teaspoon dried rosemary, crushed
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 tablespoons butter
- Peel potatoes and quickly shred.
- Mix together shredded potatoes, rosemary, salt and pepper.
- Melt 2 tbsp of butter in a large non-stick skillet over med-high heat.
- Add the potato mixture, pressing them into an even layer with a broad spatula.
- Cook for 2 to 3 minutes, pressing down occasionally, until lightly browned on the bottom.
- Dot the top with the remaining butter, cover skillet and reduce heat to medium.
- Cook for 6 to 8 minutes, until potatoes are tender when pierced.
- Uncover and place a large flat plate over skillet.
- Invert galette onto plate then slide back into skillet and increase heat back to med-high.
- Cook for 5 minutes or until browned on the bottom.
- Slide out of skillet onto serving plate.
