Veal Or Chicken Saltimbocca Recipe
- 16 ounce. veal Or possibly chicken cutlets
- 2 teaspoon garlic, minced
- 2 teaspoon shallots, minced
- 2 c. mushrooms, sliced
- 1 c. port wine
- 2 c. brown gravy
- 8 ounce. cooked spinach
- 4 Large eggs, hard-boiled
- 8 ounce. thin-sliced Prosciutto
- Tenderize and flour veal.
- Saute/fry veal in butter with shallots and garlic.
- Add in mushrooms and wine.
- Remove veal.
- Put Prosciutto on veal and keep hot.
- Add in brown gravy to pan.
- To finish sauce, serve veal with sauce over spinach with egg garnish.
- Makes 4 servings.
