Okra, Sausage, Chicken And Shrimp Casserole
- 3 lb. sliced okra
- 2 lb. cleaned and deveined shrimp
- 2 lb. smoked sausage
- 2 large chopped onions
- salt and pepper to taste
- 3 cloves garlic, chopped
- 1 can tomatoes (large)
- 1 can tomato sauce (large)
- 1 cut up whole chicken (boil for 30 minutes)
- 1 (4 oz.) pkg. dried shrimp
- 1 Tbsp. shortening
- Put shortening in deep skillet or Dutch oven.
- When hot, add okra, onions and garlic.
- Add salt and pepper.
- Let fry in open skillet on medium heat.
- Turn over once or twice.
- Add tomatoes and tomato sauce.
- Cook 10 minutes.
- Add chicken, boiled.
- Add sausage and dry shrimp.
- Cook 10 minutes.
- Add shrimp last.
- Cook 20 minutes, covered.
- Serve with rice.
