Sweet And Sour Chicken
- 1 1/2 lbs. chicken, cubed
- 2 Tbsp. minced onion
- 1 Tbsp. soy sauce
- 1 tsp. browning sauce
- 1 can 8 3/4 oz. pineapple chunks, reserve liquid
- 1 c. water
- 1/4 c. cider vinegar
- 1/4 c. brown sugar
- 3 Tbsp. cornstarch
- 1/2 tsp. salt
- 1 can (8 oz.) sliced water chestnuts, sliced and drained
- In 2 quart casserole dish place chicken, onion, soy sauce, browning sauce, and reserved pineapple juice.
- Stir well and microwave covered 20-25 minutes.
- Stir every 15 minutes.
- Mix together all the remaining ingredients and add to meat mixture. Microwave another 8 minute covered.
- Stir in 1 medium green pepper cut up.
- Microwave 8 more minutes stirring until thickened and clear.
- Fold in 1 medium tomato cut into chunks and let stand covered for 10 minutes before serving.
- Serve with rice. This recipe can be made on the stove top but eliminate browning sauce.
