Apple Sauerkraut

  1. Fry the bacon in a large saucepan until golden and crisp.
  2. Drain fat, reserving about 1 T. in the pan.
  3. Add the garlic, celery, green onions, sauerkraut, apple juice, lemon zest, sugar and caraway eeds.
  4. Simmer, covered, 20 minutes.
  5. Season with salt and pepper.
  6. Stir in the apple slices and Calvados.
  7. Simmer 5 more minutes.
  8. Serve hot with sausages.
